I was under the impression that the rpi3 and rpi4 u-boot packages were replaced by the single u-boot-rpiarm64 package. The rpiarm64 package is the one the installer and the prebuilt images are using when they boot. I ended up with the same result where there was no USB after it got past the Grub 2 screen. I don't have a spare SD card at the moment since all the ones I have are being used. Currently I'm running on 20210122 with all the updates except for the kernel.
