The latter is normal when you don't specify a fully qualified sender address. It's actually postfix that does it - if you want something else (instead of "host.domain.com"), correct the mydomain parameter in main.cf. Yep, makes sense. You need to set 'myhostname' or 'mydomain' or 'myorigin' in /etc/postfix/main.cf or like Sandy also mentioned, use a fully qualified sender address.
