Which wicked version are you using? I guess, this is the most recent one:

The Raspberry Pi 3B (Plus) and 4B platform evolved to our main test
platform for wireless support in wicked and 0.6.66 were tested on it.
It contains a rewrite to use the new/current wpa-supplicant v1 dbus API
with many fixes and cleanups[�] in wicked, e.g.: `wicked show-xml wlan0`
shows the scan result properties, e.g.:

I've just verified using 20210710 images on RPi3: it works fine with a
proper (managed mode) configuration and I can also confirm, that the
issue is caused by the obviously wrong 'ad-hoc' mode -- it caused:

This configuration worked for several years and fell off during the update,
so the point here is clearly not in the config.
IMO it is. A **fix** to properly set the ad-hoc mode causes the issue.
Could you please change to WIRELESS_MODE='Managed' in your ifcfg-wlan0?
I think, we can close this issue then (IMO as INVALID) then.
