Here's another workaround that was posted on the KDE mailing list yesterday:

The way you set the default back to Dolphin is not by selecting the radio button for Dolphin in Default Applications > File Manager (it switches right back to the wrong default on my machine) but going to File Associations > innode
directory and moving Dolphin to the top of the list. That will fix it. I also had it open up folders with gwenview5 as well as Dolphin - Super User Mode. Try that and see if it fixes the issue. "
