Today, I also saw this issue on a fresh TW installation. I solved it by right- click a folder in dolphin, select properties and change the file type association...Gwenview was the first one in the list and I moved Dolphin up to pole position :-). Closing System Settings after selecting Dolphin as the default file manager does not work because re-opening the relevant settings page again shows Gwenview was once again chosen as the default application!
I've noticed that too.
I managed to fix it selecting dolphin as default in systemsetting (the kde4 version). The selection is then mirrored in systemsettings5 (the new version). I don't think is a feature, though ...
