Can this upgrade be done on the Uyuni Server + Proxies (2020.05) with no risk ?

when you added openSUSE 15 (1 and 2) using spacewalk-common-channel you have "custom" channels. With custom channels, no version check is performed any you can free change the channels using the web ui. But we do not have a UI to perform a "dup" (distupgrade) which would be the right thing to call. You can call it directly on the client or use remote command for this. But there is a 3rd option. We have an XMLRPC API which let you define channels and call the zypper dup command system.scheduleDistUpgrade

Check the API docs.

Just for completeness: In case you have access to SCC and added openSUSE using the Product page, the channels were added as "Vendor Channels". Here we perform version checks on the product and you cannot just change the channel. Here the "SP Migration" page can be used. It will offer you the migration path and you can do it via UI. Only in this case system.scheduleSPMigration() API can be used.

I think that should, work if after changing the repositories you run an update on the client... as long as you don't have third party repositories.

If you have them, maybe you will get vendor changes, and I am not sure Uyuni is going to handle them automatically (which is not bad: in the end in this case you should know what to do, and worst case you can use a remote command to allow unconditionall vendor change if needed).
