Thanks for all the info, worked as expected. I have modified the channels of the client to use 15.2, and on the client "zypper dup" worked without any issue.
Can this upgrade be done on the Uyuni Server + Proxies (2020.05) with no risk ?

I think that should, work if after changing the repositories you run an update on the client... as long as you don't have third party repositories.
If you have them, maybe you will get vendor changes, and I am not sure Uyuni is going to handle them automatically (which is not bad: in the end in this case you should know what to do, and worst case you can use a remote command to allow unconditionall vendor change if needed).
