I have a similar setup in that I use a local imap server to manage my email-folders and use Tbird as a client (over a local net). The only oddity I see in my "sent box" is that the meta-info, the envelope line: "From me@mydomain Day Mon 11 23:59:59 2009 -0700" (no colon after the From), in my 'Sent Box' is not the same as the one that goes out the wire via sendmail. Mailers use that line for routing, while my imap server (uw imap), uses it as a message separator, but it's not part of the mail message. A possibility might be dovecot doing some non-standard peeking "into the envelope" to do some verification, but that would be a broken-implementation. If it was me trying to proceed at this point, I'd enable non-ssl connect on the server & use non-ssl connect on the client (on a direct-internal ethernet, not where it could be sniffed), and use "wireshark" to verify that the protocol was correct.
