To me that sounds like you should try with a higher screen resolution, then you'll see the whole menu. I had the same problem on a laptop once and it was because of the relatively low screen resolution. <<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<
My monitor cannot go above 640x480.
Then your first concern at all should be finding a second job and save up some $$$ to be able to get a larger monitor that makes higher resultions possible. Maybe a nice graphics card too ;-) You're really missing out on many things ;-)
