What isn't so nice is a fact that I saw a lot of "willing mentors" but almost nobody who would like to "really work" on that project. Why is that? It seems that developers are either not interested in those projects listed or they would like maximally mentor someone?

Anyway, it's time you advertised your projects among others to get the needed support. In my opinion, work goes better in groups than if a single person does it.
