Does your Exchange server provide IMAP and or POP3 access? Use the fetchmail interface if that's the case. If not... don't know.

If this mailserver has direct access to the Internet and can send mails directly it does not need a relay. If it's on an internal network, well, just ask the network admin(s) what the mail relay host is that handles mail to the outside world...

Actually, if you are not behind a firewall and have full (mail) connectivity and full DNS you don't have to touch most parameters.
