Is installing Xen and then installing Linux and Windows under it something that a novice should attempt - or should I leave that to the professionals and just install on separate partitions?

I prefer the 64 bit version of SuSE which is downloadable from opensuse.org, You don't have to wait. Just take a look at the updater problems on the mailing list and include the Smart and Smart Gui programs with your install and run them in your first few boots to pick up all the maintenance upgrades. There is not a huge performance difference between the 32 bit and 64 bit setups unless you have a lot of memory. 64 bit setups can use more than 2 gigs of memory and I believe that it is more efficient. There are very few 32 bit Linux programs that will not run on a 64 bit system, almost none but some browser plugins are not available in 64 bit.
