I have read this on many occasions and I must admit I would not know if radio frequence's interfere or not. They are not supposed to as they all have passed the tests.
It doesn't really mean that the equipment will never interfere. It is impossible to guarantee that for ever. If your router is suspect, before changing the country simple change the channel. It might also be possible to change the channel used by the keyboard/mouse. If you change the country and you happen to transmit in a frequency that is reserved for something else and you interfere with somebody else's equipment, then the may fine you.
Thanks for your input Carlos. I will have to keep a close eye on things and do some research now that I am getting close to solving (or should I say hopefully getting close) this issue.
Will let you know how things go over the next few days.
