The big organiser app for Gnome is Ximian's Evolution. However, you might find this is a little overkill - it depends what you're using it for. At the other extreme, I use JPilot, because I mainly use a desktop organizer to sync my palm device to.
I use Evolution as organizer and to sync my palm; that way I can share my contacts between my palm and evolution... however I have to confess that I can sync with evolution only 1 out of 12 times I try (I'd never beed able to sync with JPilot).
