Just read some info on rdiff-backup at http://rdiff-backup.stanford.edu/ - It looks like it has some features regarding restoring previously deleted/ changed versions of a file. Sounds cool! If you run a backup after having changed a file, change your mind and want the previous version instead, you can restore it!
