You can uninstall a pattern with out uninstalling the programs / packages it requires / recommends. AFAICT in the past "rpm -e <pattern-name>" was often the better idea than zypper or yast b/c in the past they often want to unistall the programs in the pattern. YMMV. But all said, yes, the patterns around kde and gnome are a little bit to "inclusive" for my tastes.
