I was going to reply that anti-aliased fonts in the menu-bar come from the GTK toolkit and the buffer contents lack anti-aliasing because aside from GTK Emacs 22 lacks it; but --enable-font-backend is not part of Emacs 22, so I guess you compiled not from the CVS trunk but from the one of the branches (unicode?). I cannot help you there, but you could try the emacs.help newsgroup or the emacs-pretest-bug or emacs-devel mailing lists (all three accessible via http://gmane.org).
