Cannot tell anything about the freetype issue but you don't need to rebuild or patch cairo in 11.3 as the wanted patch is already there. Something else went wrong then.

How bizarre. Why would reinstalling a rebuilt cairo library fix font rendering in gnome if the right one was already there?
