Basically, what you tell him is: Why keep it simple when you can do it SOOO complicated? If he wants it simple he would still be using his microsoft server. He wants it reliable, secure and free, so he's chosing Linux.
Spend a few days experimenting with a qmail box before taking down your Windows mail solution then. IMHO you should at least TRY to use qmail. If that fails then go with Postfix/Sendmail/Qpopper rpm's or whatnot.

I would respectfully add, if you're thinking qmail, do it now rather than later. The deeper you get into sendmail-like theology and structure, the more difficult switching to qmail is going to be, whereas the converse is not as true. Making one switch to one new technology (from the familiarity point of view) is better than making several switches. qmail is the way to go for security and reliability, as far as I'm concerned.
