I doubt you will find a howto since it is so easy. But, if all you want is to have a pop server, then Install qpopper, enable via Yast in Xinetd, Done. Accessible via port 110. If you want a bit more complicated but better, more complete, and more secure, install UW imap package, create your pop3s and imaps certificates using instructions from the suse database http://en.opensuse.org/SDB:Enabling_SSL_Sessions_with_the_IMAP_Mail_Daemon then enable pop3s and /or imaps to have a working pop3s and/or imaps server(s), accessible via ports 995 and 993 respectively.
