Don't know details about quake, but look here for doom3: http://zerowing.idsoftware.com/linux/doom/ I played it, it installs easily. You need to copy the .pak files from the CD. They might be inside .cab, you can extract from those with linux tools. Or copy the .pak files from a Windows Doom3 installation.
