The default is to use the DNS services from your internet provider :-) Anything else is really up to you.
I am very often in uncomfortable environment were you wish either to use a vpn (not always possible) but at least have your DNS request been send DOT and validated DNSSEC. One example is a tethered 4G connection. There I am not even the possibility to resolve if I do not use such a setup.
Then there is a "bug" with your ISP setup. When I tether with my phone Linux works out of the box, it does resolve. If I don't like their setup then I change it - using dnsmasq.
