grub2-mkconfig has absolutely nothing to do with initrd and never had.
Of course you're right, but grub2-mkconfig is the right command to generate the proper boot configuration right before the usual mkinitrd/dracut command to actually generate the initrd. I forgot about that, but use these commands in the required order. Nevertheless, Marco should use "sudo plymouth-set-default-theme --rebuild-initrd <your-theme-name>" to achieve what he wants.
