Appart from protection provided by the UDF filesystem (so you can mark read-only specific archives and directories inside the CD) and the ability to mount things read-only of the operating system, the best thing to do is just to put the CD in the CD reader, not in the CDrecorder. Things will go additionally much quicker then. Do not forget to specify auto instead of iso9660 as the filesystem type in /etc/fstab.
