I suggest to copy what they did, package it on OBS and submit it for inclusion in GNOME :D
If you mean the Ubuntu Light Themes[1], you need GTK3 engine "unico"[2] (I did had that one covered, thanks to vuntz in 12.1 already). For the themes to render properly (and potentially not crash mutter) you need to patch mutter, and that also lives in GNOME:Ayatana for quite some time (with the light-themes package)... If the license allows, I think I'll place the fonts there as well, they are quite nice.
