The "High definition Audio Controller digital Ster.." is probably your graphics card's HDMI output. You should see it in systemsettings5->Multimedia->Audio and Video->Configure Audio Hardware too (in the "Soundcard" chooser).

No, it doesn't. It only shows *one* "Built-in Audio Analog Stereo device". But it shows two volume controls for the default sound card: one for the *playback* volume and one for the *capture* (recording) volume. If you hover your mouse over the slider, you should notice...
