My / partition is 40 GB in size, and once rebalanced typically has 13 GB of free space. Plenty enough I would presume. I usually leave the default settings on their own, though getting Snapper to ask to remove older snapshots before updates that will clog up the system is probably going to be helpful. Or just more aggressive removal settings unless otherwise stated.
