There is an option indeed to change the default filesystem and a few settings (like mount by label), which I use to change the default to Ext4. It is hidden in the expert partitioner, at the bottom of it. Or many somewhere else, I don't have anywhere to try and refresh my memory.
What I don't remember is if it can then restart the proposal with those settings, because typically I do my own choice in expert mode.
