It's a long time since I used sendmail, sticking now to exim - much easier and safer, and acts like sendmail when called using a symlink called semdmail. Have a look in sendmail.cf for the word smarthost. In there you should see a commented out command to tell sendmail to use the smarthost to forward all outgoing emails.
