Actually I'm not that sure. We speak about Linux root UUID - how is it related to GRUB at all?
Because grub2-probe is used to determine that uuid in grub2-mkconfig.
GRUB does not need or use this information except passing it onto kernel.

While I'm not sure what good portable upstream solution could look like, for local Linux distro patch using blkid here would be quite appropriate.
I'd rather pick f2fs patch if we want this fixed rather than calling blkid in grub2-mkconfig as it's future fix from upstream. The other concern is the idea behind grub2-probe is to have the grub utilities less dependent on external commands that helps it running on different systems, basically follow the idea .
