On a freshly installed server, clamd died after starting it (and the initscript
said it started successfully).

To make the story short: The reason was that the virus signatures in
/var/lib/clamav (daily.cvd and main.cvd) were missing.

Please add a check like the following to the initscript (in the start section):

test -f /var/lib/clamav/daily.cvd -a -f /var/lib/clamav/main.cvd || {
    echo "Virus signatures missing. Please run freshclam first!"
    exit 1  # or rc_something that has the same effect
}
