Your kernel command line doesn't contain a "vga=xxx" parameter (indicating what
VESA mode to use for a framebuffer console), so the framebuffer cannot work.
The fallback is then the VESA driver which may or may not work with your
graphics card. If it doesn't, the second stage of installation falls back to
ncurses (text) mode.
This is what you saw.

Now the question is why this "vga=xxx" parameter disappeared from the kernel
command line.
