Just happened again :-(
The previous boot looks good (I'm logging the content of /proc/mdstat from
boot.local):

On the next boot, only sda3 was used for md1:

No sign of an error message :-( but the line "bind<sdb3>" is missing.
This still leaves the question why sdb3 was not added - any idea where you
could add/log another error message? ;-)
Another boot later, I get an error message (as expected, because sdb3 is
outdated in the meantime):
