After upgrading to 27.1, my configuration did not work anymore and I could not load many packages eg. org mode. Additionally, there was console output with messages of every package being loaded.

Once I called emacs-gtk directly, or emacs-gtk -nw for console, everything works ok.
Sounds like a duplicate of bug #1175487 Could you try the *latest* emacs 27.1 from repository editors. You have to refresh emacs, emacs-x11, and maybe emacs-nox with emacs-info.
