AFAIK, You must adjust the mime types. I don't know how doing this in GNOME. In KDE -> Control Center -> KDE-Components -> File-Assignment (Dateizuordnungen, in German, don't know if I translate right) look for: text -> html text -> xml application -> xhtml+xml application -> xml than You can add seamonkey, firefox, konqueror, ... Put them in the right order (If OpenOffice is first, than it's taken fist ;-) In GNOME analogical.
