Of the software you mention, Evolution would be the best suited for you. Being a die-hard Outlook user, if you ignore the limitations in Evolution (mainly no Exchange 2007 or 2010 support) I think Evolution is a great replacement for Outlook.
As is Thunderbird with Lightning. Just wanted to clarify that option is available with TB as well. The remaining is personal choice. And I'm sure KDE people will tell you that Kontact is integrated with KMail and their calendar thing (whatever it's called).
