OK, so portmap was not running because that package wasn't installed
on the server. I installed it, then ran into portmap[20840]: cannot
bind udp: Address already in use type errors.
I managed to kill something that was using port 111 and both nfs and
portmap are now running, but I still have the same problem.
/# rcnfs status
Checking for mounted nfs shares (from /etc/fstab): running
/# rcportmap status
Checking for RPC portmap daemon: running
Is there anything else I can check?

So Carlos was spot on when he suggested you try a manual mount first. :-) Looks like the portmapper isn't running on your NFS server.
