I thought it used to do this. Whenever I wanted to restore a backup of the ~/.evolution data directory, I had to first kill gconf and/or bonobo-activation-server. These were apparently started again by Evolution. Not killing them resulted in old data being used. (Maybe the inodes just deleted were still open.)
