The new "NTP configuration" tool in yast seems to be quite unintuitive,
because I don't find any way to select an NTP server to synchronize the local
clock. Is there a way to do this ?

Yes, if fact it appears better than earlier versions. In Yast > NTP
Configuration, select "Now and on boot", hit the "Add" button and
follow the prompts. You can select the source, such as server, then
local etc.
