Just a guess, but after assigning the root password, can you access mysql from a konsole window (command line) using:
mysql -u root -p
If this is not the case mysql has probably crashed (which would explain the 2002 error). In restarting MySQL a possible issue is that the SuSE mysql startup script is likely to have been replaced, I have in the (distant) past installed MySQL from MySQL sources on SuSE and the main problem at that time was that the standard MySQL startup script did not function correctly on SuSE, replacing it with the SuSE startup script solved that issue at that time.
However, I have never come across the situation where just setting the root mysql password has caused all connectivity to mysql to fail or mysql to crash, which rather suggests to me something rather more fundamental is broken. What I would try and do is keep the relevant XAMMP bits but replace those bits which SuSE does provide from the SuSE RPMs (with things like Perl,PHP and MySQL this should not cause too many problems, some of the more exotic bits may create issues).
Although the XAMMP stuff is placed under /opt one does not have any guarantee that other things may have been pranged in unpredictable ways as well. In this case you may even be inadvertently be attempting to run two instances of MySQL but without knowing what is installed where and how with this bundle one has little to work with.
