The list should check on sign-up for a valid email address and refuse all default addresses like "iamanewbiepleaseshootmeintheheadfornotknowinghowtosetmydomain.site" How this joker ever gained an account with return address of localhost.linuxserver.site is beyond me.
Most probably the mail was received by his ISP, then polled via fetchmail and fed to Postfix. If he misconfigured Postfix/some-MTA the mails are bouncing straight from his system (or his smarthost) to you.
