I think "simplest" is subjective to individual preferences. But for me, I think the simplest method of backups is by using rsync. If you have the space for it, rsync will mirror entire directories from one dir on your local computer to another dir either on your local computer or a remote computer. There is also tar. With tar, you can use a snapshot file to backup only newer files in an incremental fashion.
