I have a Palm Treo 650 that I have been syncing one Linux since the day I bought it. I have been using JPilot for years because I use the memo interface extensively. I sync with Outlook at work. In the past I have reported some issues with syncing on some older SuSE releases, but I've also found working solutions.
FWIW, I have a Nokia N800, which runs Linux. While it doesn't sync to email, it does have an email client that can connect to an IMAP server. This means the mail will automagically sync, whenever you connect to the mail server. While I have an IMAP server at home, I haven't set up the N800 to connect to it yet (I have to get OpenVPN going first).
