When you install you are given a choice to make OO the default for certain extentions. You change these after the fact as well.
As usual its just an RTFM issue.
Open OO writer. Press F1 for help Select Find tab. Key in the word "Extensions" and click find.
Read the topic called "Changing the Associations of Microsoft Office Document Types.

Will this restore the associations to Microsoft Word also, once they've been overridden, or is this something you have to get right at installation time?
That depends on the version of word previously installed. Some versions have an associations option. Some don't.
In all cases that I have seen, simply right clicking on any .doc file and select Open With, Choose Program, (select Word from list) check the box at the bottom to always use this program.
This facility only became available in XP IIRC. If you have it, its even easier than using the OOsetup program.
