You need a DVD drive for one. Get vobcopy and rip the dvd onto the hard drive. The vob file needs to be taken apart as a mp2 video and stereo tracks.
Which software do that? I dunno. Who is next on the soapbox, people.

Hi all,
I would like to take the soundtrack off a DVD, much in the same way as
I might "rip" a CD. Can I do this?
Cheers,
Simon
