So... How can I selectively suppress the auto-mounting of this device so VMware can allow the Windows host OS to access it? I don't mind having to take some action before inserting the flash stick when I want it to be seen by Windows, but I not willing to reboot or even log out and back in to do so.
Any ideas?

It is not that difficult. Hotplug is automatically loading usb-storage when you plug the drive in. You can disable hotplug, but other usb devices will not be activated. Or, as root, do a rmmod usb-storage; however, this module supports all USB storage devices. If that is acceptable, then go to VM>>Removable Devices>>USB Devices and check the name of the drive. If it is not in the list, go to Full Screen in VM, unplug and replug the drive. It should now appear in the list, and may even show up in My Computer.
