In fact, if your BIOS support the "stop on: no errors" you don't even have to have a graphics card in. My "toy" PII machine has just a network card in, nothing else.
sitting in the corner (still on the network) and access everything on it? Even Gnome, OpenOffice, Evolution, and such? VNC server should be able to help you, although I don't know much about it - haven't worked with it. I'm not sure if X would work without a graphics card either, you'll have to try.
