The only thing that you cannot change after installation is the size of partitions. You should read carefully what the install program does with partitions. The install program will almost always create something that makes sense. SuSE software uses a database called RPM. This makes it very easy to add and remove many packages at the same time. The database records package dependencies; so you should never have a problem where one package depends on another. Also, unlike some other OSs, when you remove a package, it gets removed correctly. I often use a default installation, then choose packages. I make several hundred package changes at once without worrying about conflicts.
