This is because most likely /opt/gnome2 isn't in your path statement. What happens if you cd into /opt/gnome2/bin and type ./galeon? This should work. I know that when I installed Gnome2 onto my 8.1 workstation in the office it wasn't put into my path statement automatically. It also has other issues but I won't go into that right now.
