I have no idea if your current mail server host will redirect mail or not. It's certainly technically possible, but you'll still be dependant on him, since with a redirect it will go to his server and be bounced to yours.
My problem is that our site host's email SUCKS! At least 2 or 3 times a day we experience a problem with getting or sending email. Can tom@neuro-logic.com which now goes to my host's pop server, be sent to my mail server without my host ever touching it? I want to make sure that if I go thru all this work, I won't be dependent on my host.
If you want your own mail server you'll have to tell whoever is in charge of the DNS for neuro-logic.com to change the MX record to point to your machine. Then ell mail will be sent there directly. Test everything thoroughly before switching MX. Both from inside the LAN and from outside (have someone set up a fake config to force the mail to be sent straight to your machine). Also let your server be tested by some anti-spam site (I believe there's something on abuse.org, not sure though) so you're not setting up an open relay. When you're certain everything works, make the change in the DNS. Then you'll be free of your current host :)
